About Al-Himh

The Al-Himh (Haimah) region is one of Yemen's most prestigious coffee-growing areas, situated in the rugged highlands. Characterized by extreme altitudes and ancient terraced farming, the region produces coffee with distinct floral and spicy complexities. The arid climate and volcanic soil contribute to the high density and concentrated flavor of the beans.

Annual Rainfall:  400-600 mm

Temperature:  10-25 °C

About Anaerobic Fermentation

Coffee cherries are placed sealed tanks, creating an oxygen-free environment. This allows microorganisms to work slowly, developing distinctive, complex, often fruity or wine-like flavors as the beans absorb sugars and compounds from the cherry.
