This method consists of fermenting coffee in oxygen-free, pressurized sealed tanks. We select fully ripe cherries above 22% Brix andplace them inside a tank with a system that takes oxygen and CO2 produced during fermentation. This process produces different acids and gives a particular flavor profile of the coffee.
